Great taste and reduced salt haven’t typically gone hand-in-hand when it comes to savoury food products.

That is until Fonterra scientists developed a dairy-based savoury flavour enhancer.

Our unique savoury powder allows the level of sodium to be reduced by at least a third while boosting savoury flavours in a range of processed foods. As well as heightening perception of salt and umami, the flavour enhancer boosts meat, cheese and vegetable flavours in a variety of foods. Sensory evaluation panels have described the flavour of many applications containing the product as tasting more “wholesome and home-made” and more subtle than yeast extracts.

The concentrated ingredient is Fonterra’s answer to growing health concerns around excessive sodium consumption. Primarily made from wholemilk using a patented fermentation process, all of the powder’s ingredients are natural – an important factor for manufacturers targeting increasingly knowledgeable and health-conscious consumers.
